Self isolation creation: How to make the perfect ice cream taco

The ice cream taco is one of our favourite ways to enjoy our ice cream. Not only does it look great for your self-isolation snaps, but you can also make the shells in advance and have these sweet treats prepared for whenever takes your fancy!

Making these can even be a quarantine activity for all the family and are fun to make and even more fun to eat! Time to get creative! (Just don’t forget the napkins)


For the tacos

½ cup brown sugar

1/3 cup butter (melted)

2 tbsp honey

3/4 cup of all-purpose flour

For the filling

Any flavour of Porrelli Ice Cream

Chocolate, sprinkles, plus any other desired toppings


Ideally, you will need a waffle iron to add your batter to. If you don’t have this, don’t worry!  Making your own is easier than you would think! Here’s how:

Step 1

In a large bowl, mix together the brown sugar, melted butter and honey until fully mixed and batter is thick.

Step 2

Ladle your mixture out onto baking parchment paper into 3 even circles. In advance, you might want to pencil out your circles to make sure your tacos are all even sizes.

Step 3

Bake at 180 degrees for 6-7 minutes until golden brown. Once taken out the oven, let them cool for no more than a minute before loosening each cookie. To shape, you can mold your batter into the taco shape by curling around a rolling pin, thin condiment bottle, or even the spine of a book! Leave to cool for 5 minutes.

If you have a waffle iron, heat up for a couple of minutes, place batter in for a further 2 minutes and when removing, use same process to curl.

Now you’re ready to fill!

Step 4

Take your favourite Porrelli Ice Cream flavour out the freezer and scoop 2 (or even 3 if you’re our kind of person) scoops into your tacos! Remember to wet your ice cream scooper first to create the perfect scoop!

Step 5

Top it! No ice cream taco is complete without your favourite toppings! For this, we recommend melting cooking chocolate in a bowl over a saucepan of boiling water, stirring often until fully melted, then dip your taco into chocolate, add our sprinkles and leave in the freezer to harden (around 10 minutes)

This is your chance to get very creative, you can top off your ice cream taco with whatever you fancy! Sauce, sprinkles, marshmallows, sweets or sugar coat it, the possibilities are endless!

Step 6
